Harvest Part 2

Pinot is in the fermenters and harvesting Pinot gris begins! There is so much going on in the winery at this time! A big difference between harvesting Pinot noir and Pinot gris is that the gris is pressed whole cluster as it comes up from the vineyard and then ferments in stainless steel and some in oak while Pinot noir is destemmed and fermented on the skins and seeds so as to extract flavor and tannins. This fermentation takes about 14 days. Some of the first grapes harvested have finished fermenting and will be pressed today.
