Creamy and delicious recipe that I love to put on top of salmon, but can also be used with steaks, pork chops, veggies and just about anything else you want.

Mushroom Sauce

Serve with 2015 Pinot Noir Reserve

Serves 4

Prep Time: 20 minutes


1/2 T extra virgin olive oil
5 Oz diced mushrooms
1 T all purpose flour
1 tsp rosemary
1 clove garlic
1/4 cup diced onion
1/2 cup cream
1/2 cup dry white wine - I used our 2020 Chardonnay
pinch of salt
pinch of pepper


Heat sauce pan on medium heat
Once hot add olive oil
Add onion and cook until golden brown
Add mushrooms and cook
Add garlic and rosemary and cook until fragrant 30-60 seconds
Add white wine - it will sizzle. Stir, scraping the bottom of the skillet for about 1 minute
Add cream and stir until sauce is simmering
Lower heat to low and stir occasionally for 2-3 minutes
Stir in flour and take off heat
As sauce cools it will thicken
Serve on top of salmon
