Mango Salsa
An easy recipe that pairs wonderfully with Winter’s Hill 2023 Watershed Pinot Gris. Enjoy eating it with chips while relaxing on the deck. It also adds a wonderful, tropical, slightly spicy note to any white fish or used as a side dish on it’s own.

TASTING NOTES
The nose is rich with jasmine and orange blossom, with ripe fruit flavors of pear, stone fruit and key lime. A few months of aging on the lees, and partial malo-lactic fermentation give a fullness and richness to the wine. On the finish, you'll find the slight grip of tannin which is the signature of cool climate Pinot gris.
WINEMAKING RECAP
Fall 2023’s perfect weather conditions gave us the opportunity to create a classic Oregon Pinot gris. After gently pressing the whole clusters of hand-picked fruit, we fermented the juice in stainless steel. Keeping the fermentation cool preserved the aroma and fruit character of the wine.
Mango Salsa

Ingredients
6 oz mango- diced (approximately 1 cup)
1.5 oz tomatoes – diced (1/4 cup)
2.5 oz Cucumber – diced
.5-1 oz seeded Jalapeno (1-2 Tbs)
1 oz radish – diced
2 oz onion – diced
.5 oz cilantro – minced
SEASONINGS
½ lime – juiced, plus zest
2 Tbs extra virgin olive oil
½ Tsp each salt and pepper
Directions
Dice and mince ingredients as listed above.
Place all in a bowl.
Gently stir in olive oil, lime juice, lime zest, and salt and pepper.
