Sharing and collaborating with other local businesses is one of the best parts of operating Winter’s Hill. Trellis is one of the excellent restaurants in Dundee, and owner, Mila Headley, shares Emily’s passion for flowering plants and restoring our connection to the natural world. They recently met to discuss plans and ideas to improve the already lovely Viewmont Greenway Trail in Dundee.
While she was at Winter’s Hill, Mila graciously shared their Roasted Beet Salad recipe (click the email link to review the recipe). If you can’t visit Trellis in person to enjoy Chef Joe’s handiwork, try this at home. Bright, earthy, and layered with flavor—this is spring on a plate.

Pair it with our Watershed Chardonnay for the win! Fermented and aged in stainless steel, this is our most delicate and aromatic Chardonnay. It’s currently featured on the tasting flight, and we’re down to the last 10 cases, so I expect we’ll sell out before the end of May.
