Harvest time is almost here! Sparkling wine always starts the season off, and we are planning to press our first fruit this weekend!

How do you like your bubbles?

We like our sparkling wine to be crisp and refreshing. To achieve this we harvest the fruit earlier when sugars levels are lower, and the natural acidity of the fruit is slightly higher.

Pressing sparkling wine is a very slow and gentle process. We need to be extra careful to avoid extracting any bitterness from the seeds, or color from the skins. We never want bitter wine, but in sparkling wine, even a trace amount can be unpleasant.

Each press cycle takes 3-4 hours but it’s all worth it when you pop the cork and enjoy a glass of bubbles with friends.
